Metabisulphate in prawns

Can anyone provide me with a concentration rate for metabisulphate when
soaking in Penaeus monodon prior to freezing on board ship? The prawns are
caught from wild stocks off the E African coast. The only variation in
fishing conditions that has been reported is that the fish sometimes come
from turbid water, for example when fishing near estuaries or during the
rainy season.
