NOAA has released a document to provide guidance for conducting sensory
testing on seafood suspected of petroleum taint. The need for these
guidelines was identified after several recent oil spills, where sensory
testing of seafood was conducted and there was confusion over appropriate
sensory testing procedures and techniques. This document should clarify
how to conduct sensory testing in a scientific and legally defensible
manner. The document is entitled:

The document gives guidance for conducting appropriate sensory tests to
objectively assess seafood resources for petrochemical taint following an
oil spill. This document is aimed not only at sensory professionals and
assessors, but also for personnel responsible for managing seafood. The
guidance applies to finfish, shellfish/mollusks, and crustaceans.

the information in the document also covers general sensory evaluation of
