NOAA has released a document to provide guidance for conducting sensory
testing on seafood suspected of petroleum taint. The need for these
guidelines was identified after several recent oil spills, where sensory
testing of seafood was conducted and there was confusion over appropriate
sensory testing procedures and techniques. This document should clarify
how to conduct sensory testing in a scientific and legally defensible
    manner. The document is entitled:

NOAA Technical Memorandum NOS OR&R 9
"Guidance on Sensory Testing and Monitoring of Seafood for Presence of
Petroleum Taint Following an Oil Spill"
    Seattle, WA August 2001
By Terriann I. Reilly, Chief, National Sensory Section, Seafood
Inspection, USDC/NOAA and Roberta K. York, Canadian Food Inspection
    Agency, Laboratories Directorate

According to Ruth Yender (USDC/NOAA), the document will be on the internet
at the NOAA website by this Friday, 9/28/01, via:
    http://response.restoration.noaa.gov/oilaids/reports.html

The document gives guidance for conducting appropriate sensory tests to
objectively assess seafood resources for petrochemical taint following an
oil spill. This document is aimed not only at sensory professionals and
assessors, but also for personnel responsible for managing seafood. The
guidance applies to finfish, shellfish/mollusks, and crustaceans.

    >From the following chapter and appendix headings, it becomes apparent that
the information in the document also covers general sensory evaluation of
    seafood principles:

Ch. 1 Scope and Use of Guideline
Ch. 2 Collection and Preservation of Seafood Samples for Sensory
          Evaluation
Ch. 3 Selecting Appropriate Sensory Test Methods and Assessors
Ch. 4 Selecting, Training, and Validating Sensory Assessors
Ch. 5 Facility Requirements for Sensory Evaluation of Seafood
Ch. 6 Sample Handling, Preparation, and Presentation in the Laboratory
    Ch. 7 Sensory Evaluation Protocols
Ch. 8 Collection and Analysis of Test Data and Decision Criteria
    Ch. 9 Bibliography*

*The extensive bibliography provides supplemental resources for more
in-depth information on sensory testing in general and for sensory testing
    specifically for taint.
