I received a vacancy announcement from Dr. P. Brett Kenney who is looking
for a Ph.D. in food Science with an emphasis on the physicochemical
properties of fish muscle as a raw material for fresh and value-added
applications. Demonstrated research experience in both laboratory and
statistical analyses relevant to protein functionality, preferably
including gel electrophoresis, differential scanning calorimetry,
rheological assessements, scanning electron microscopy, and product
formulation.
Review of applications begins on 9/15/01 and will continue until the
