Please see the accompanying query from a colleague who would be grateful for
any information or views.
"The enforcing authority is concerned about the condition of a consignment
of Russian caviar
which is being stored in their area. The caviar is in very large cans
(1.5kg
net) but the cans do not seem to be fully sealed. They appear to be two
separate halves which are slotted together and have oozed a type of oil
which has dried around the join. The authority has been advised by the
importer
that this is standard practice for large cans of caviar and that the dried
oil has formed a seal protecting the contents.
The authority is also concerned that the cans do not state that the
contents have been pasteurised or otherwise treated for long life. They
understand that caviar can have a shelf-life of 2-3 months if sealed but
not treated. The cans have a manufacture date of June 2000, so if the
contents have not been treated this would be a serious problem. Again, I
would be grateful if anyone can confirm or deny this expected shelf life."
