POSITION: Food Technologist
The incumbent will plan, coordinate, and conduct research to develop
information and technologies to improve the efficiency of post-harvest
handling and processing of channel catfish. Specific objectives of the
research are to 1) to develop and/or test methods to reduce fat content in
belly flaps; 2) develop and/or test new products developed from
reduced-fat belly flap meat; 3) develop new binding agents to transform
mis-cut fillets into new formed products; and 4) develop new formed
products developed from mis-cut fillets and identified binding agents. The
research will provide new knowledge to be used to improve value-added
processing of channel catfish and to develop new value-added channel
catfish products.
SPECIAL REQUIREMENTS: Ph.D. in Food technology or microbiology, biology,
chemistry, physics, or a related discipline or field of biological or
physical science. A working knowledge of fishery product processing is
desirable.
