surimi processing

    Friends,
    I am looking at alternate technology for leaching of surimi. Usually the
    meat is stirred using a mechanical agitator. Is it possible to use
    bacteria free, oil
    free compressed air to agitate the meat? Will this improve the quality of
    meat and sufficiently remove the fat, blood and other impurities? Is there
    any risk?
