I am not aware of electronic publications with pictures of spoiling fish but
you can consult the nice publication : A guide to the grading of fish and
shellfish by Krissana Sophonphong, Low Lai Kim and Lim Pang Yong published
jointly by the Marine Fisheries Research Department of the Southeast Asian
fisheries Development Center (SEAFDEC) in Singapore and the Fish Inspection
and Quality Control Division of the Department of Fisheries of Thailand. It
includes colour pictures of several fish and shellfish at different stage of
spoilage. It is from 1998 and the ISBN number is : 981-04-0078-0.
