Good Morning,
Is there anyone who smokes Albacore and then retorts?
I am looking at our process which is a 3 hour cold smoke and then a 4 hour
hot smoke before packing into cans.That
pretty much uses up our exposure time to unrefrigerated conditions,the time
we have for chunking before smoking and then packing into cans puts us over
the limit.Any suggestions?
