    Fellow list serve members,

    There seems to be some confusion concerning the legality of using acidified
    sodium chlorite solutions as a processing rinse of fish fillets.

    According to 21CFR Part 173.325, dated August 5, 1999, acidified sodium
    chlorite solutions are approved for use in water and ice that are used to
    rinse, wash, thaw, transport, or store seafood in accordance with current
    industry standards of GMP. The approval is for actual use strengths of
    40-50 PPM.

    If I wished to use this as a pre-brine fillet rinse for salmon intended for
    cold smoking, would we,

    * Be legal.
    * Be required to list the acidified sodium chlorite as an ingredient or
    additive.

    Before I pursue this further, I would like a definitive statement on this.
    We are getting mixed messages.
