    Dear Alan:

    As you may be aware of, there is quite a good inverse correlation (often
    r=0.99) between fat and moisture. Of course, this is specific to each
    species. Since you are interested in estimation, measuring the moisture
    content of the well represented homogenate of fish tissue will be a quick
    solution. First, you need to establish such a correlation with a linear
    function from which you can convert moisture value to fat content. The best
    way is to aquire data during a particular harvest season, or if the season
    runs yearround, you may need to collect data throughout the year. We also
    have developed a solvent extraction method which you may need a solvent as
    little as 20 ml (chloroform + methanol) for 2 g sample (AOAC Intern. 79(2):
    487 (1996). In this report, we used 50 ml to 5 g. It takes a little over
    an hour. But you need a good balance. I'll be happy to go in detail, if you
    are interested in.
