    Hello Alan:

    NIR will work quite well and give other parameters in addition to fat. But
    it requires expensive instrumentation. You didn't mention how big the
    fishing vessel is.

    For NIR it is only necessary to grind the sample, insert it into a sample
    cup and insert the cup into the instrument. The read out is instantaneous
    (almost). It also requires an initial calibration which is done by the
    manufacturer.
