According to the US FDA's Hazards and Controls Guide "Nematode larvae have
been shown to survive 28 days in an 80 degree salometer brine (21 % salt by
weight)". Chapter 5 (Parasites) of the guide can be found on SeafoodNIC.
Perhaps one of the references would go into greater detail about what that
would be to a nematode in a salted fish instead of brine.

Subject: Survival of worms in salted fish
Does anyone have figures for:
a) the minimum salt content of salted pressed anchovies and pilchards
sufficient to kill anisakis
b) the Aw of these products
Thanks in advance.
