The best way to see the state of the art, and to network with interested
people would be to check the web page for the 3rd International Conference
on this topic which was just held in September, 2000:

FYI, selected papers from the conference will also be part of a special
edition of the International Journal of Food Microbiology, due out before
the end of the year.
