Dear colleagues,
I'm looking for some infos on eels. Any flow rate diagram about
eel's smoking, the way we can smoke them, if there's any special technique
on their smoking (I think a producer told me that we increase rapidly the
temperature or the specific moisture in the kiln during a specific part of
the smoking procedure, but I'm not sure about this), the conditions we use
for their smoking, their storage of life and the conditions of storage, the
time we can keep them in storage, and the acceptable values of TVN, TBA,
etc, according to FDA.
Also, if there's any site where I can gain more information.
