    Fish Plus has been formulated not so much for water retention improvements
    as for shelf life extension of seafood at refrigerated temperatures. It
    comprises of potassium sorbate, citric acid and STPP to fix the pH of
    solution at a steady point (if I remember close to 6.2-6.3) where the
    sorbate is still effective against spoilage bacteria. According to my
    personal experience, the product may perform well in most applications while
    substantially extending shelf life of various raw seafood products through
    depressing the off-flavour generating flora.
