I think before you can create a postulate "on ice" you have to examine the
problems with your variables.
Species of fish
Depth of harvest
Condition of harvest
Temperature of the harvest at the ice phase
Chemical and physical make up of the ice
Crystal formation of the ice and its age prior to application
Surface area of the harvested fish (oily, hard surface, scales, and, etc.)
Duration of harvest in the ice
