The number of retail made-on-the premises sushi operations in food stores
have increased nationwide. PA Department of Agriculture in partnership with
the PA Food Merchants Association, Genuardi's Family Markets and Advanced
Food Concepts have produced a video based on PDA'S Sushi Guidelines. The
video is aimed at both industry and regulatory personnel to give them a
better understanding of the potential hazards associated with the product.
It is based on sections of the 1999 FDA Model Food Code and independent
research by PDA.
