I have found the discussion on the YPS issue to interesting and even
entertaining. I for one would not want to shut the door on such issues
however I find it distressing to read such quick dismissal of some very
detailed and well thought out attempts to put the issue into perspective
as far as the true risk of injury. Especially since those supplying the
information are the experts and have the credentials to back it up.
This whole issue is really only about the degree of risk since
everything we do, say and eat from the first decision to wake up in the
morning till the next awakening carries some level of risk. When it
comes to smoked fish there are several items that carry far more risk
and warrant more attention than YPS. Just looking at the "chemical"
aspect; applying partially burnt wood products from many varied woods
and using many more methods, applies known carcinogens and toxins in
much higher levels. Somebody worried about YPS should probably not be
in the smoking business. Based on consumption calculations that I have
read here, to consume enough YPS, via smoked fish, to raise concern
would probably kill the subject from NaCl overload not to mention fish
overload While seeking to denigrate YPS as evil may I suggest whomever
has the deep pockets also see if this cyanide laced product is
inhibiting microbial outgrowth or toxin formation.
I have also repeatedly wondered why somebody in Chile is so concerned
about what FDA and USDA is going to do about the issue or why they have
not responded. To comment would add credence to what is, at this point
unproven and alarmist, much like yelling "fire" in a crowded theater.
Advising clients to make a change on unproven speculation is
questionable advise. Since Mr. Dewitty has been well funded for this
info may I suggest that he commission an independent non biased study on
this subject and when there is proof then you can expect FDA and others
to comment or react (myself included). Does not Chile have a regulatory
agency? I for one would start my safety inquiry in my own country.
I am also concerned by what I interpret as a veiled threat to the
industry if others do not follow suit and eliminate the use of salt that
contains YPS. The Chilean fish farming industry needs to be more
concerned about the feeds, dyes and drugs used in that segment of the
industry than obscure and unproved risks of YPS.
Please Mr. Dewitty, this is your issue, you have the funds, do your
homework first and then come back with the facts and proof. You are
attmpting to badger others into funding and doing the work to prove or
disprove your concerns.
