    I am not aware of a single publication that covers what you are seeking,
    though there are several publications in scientific journals dealing with
    aspects of the subject. A book 'Farmed Fish Quality' S Kestin and P Warris,
    editors, is scheduled for publication in October and covers aspects of
    cultural practices and quality. More information can be obtained from the
    publisher's web site, www.Blacksci.co.uk. Look under forthcoming titles and
    search for the names of the editors. Lindsay Laird and Selina Stead of
    Aberdeen University are editing a book on salmon farming that will have
    chapters on cultural practices and end product quality. It is hoped the book
    will be published this year. You can get more information from Lindsay at
    l.m.laird@abdn.ac.uk.
