Campden and Chorleywood Food Research Association has a very informative web site at
http://www.campden.co.uk/ . The scientist to contact with reference to MAP is Dr. Brian Day . Some of the CCFRA publications are available to members only, so membership is a worthwhile investment.

Campden & Chorleywood Food Research Association have some excellent
publications on modified atmosphere packaging including a "Code of Practice
for the Manufacture of Vacuum and Modified Atmosphere Packaged Chilled
Foods with Particular Regard to the Risks of Botulism". They should have a
website now. I have found them to be a very useful source of information.
