    I have read this professional exchange with great interest.

    We have initiated testing on round fish preserved in ice produced with YPS
    salt to detect compounds formed during storage, transport, and processing.
    Your full story about the condition of these fish would help my people
    greatly in our work and would contribute to designing technologies to prevent
    this from happening in the future.

    If fluids have penetrated into your refrigerated system I would recommend a
    water solution containing 1% sodium citrate be scrubbed onto the surface of
    your unit. Allow this to stand overnight. The following morning wash all of
    the surfaces with a 5% water solution of baking soda. Then wash off the
    residues with clean hot water.

    Another useful blend would be to make a 1% water solution of equal parts of
    citric and ascorbic acid and apply this to the unit. Allow the solution to
    penetrate overnight and then react it with the baking soda as described above.
