Dear Listers:
It would greatly help my studies on YPS contained in food grade salts if
someone from FDA on this list could direct me to the safety studies they have
performed or have supported on this topic. I am interested primarily on how
much iron can be absorbed from a saturated YPS brining salt into the muscle
tissues of a fish to be smoked or conventionally processed. Also, I am very
interested in the attraction YPS may have in gathering other metals such as
lead and mercury into treated fish tissues.
After reading the USDA report on the effects of sunlight on YPS I was very
alarmed. Now I am concerned that if processed fish are treated with salts
containing YPS this substance may increase the attraction of other heavy
metals into my processed foods. Higher concentrations of these metals would
not only constitute a health hazard but could effect the sale of fish due to
metal contamination. Has anyone come across studies on this question?
