Hard Clam off-flavor

    I have been asked to identify a flavor problem in hard clam (mercenaria
    spp). The clams were harvested from high salinity areas and there is no
    change in any other organoleptic characteristic. The clams are said to
    taste peppery and spicy hot. Product has been harvested from the same
    areas in the past without this problem.

    Any ideas????
