We are a processing factory in Fiji and one of our products is sashimi Yellowfin and Skipjack. We have had much discussion recently with our JV partners on the rainbow colours in the fish's flesh and its relationship to quality. Some feel this rainbow colour appears just before the flesh turns brown while others feel that this indicates freshness.
