The name "Schillerlocken" is applied in the Netherlands and Germany to hot smoked dogfish (spur dog, spiny dogfish, Squalas acanthias, and other dogfish species) belly flaps. My understanding of the origin of this name is that the hot smoked curled (into a tube), golden coloured belly flaps of the dogfish resemble the hair locks of the German poet, Johann Christoph Friedrich von Schiller (1759-1805), hence the name "Schillerlocken." The name has such an interesting origin that I hope it is true. Schillerlocken is delicious, by the way.

Catfish is an excellent fish. We all know that but, there is still the =
