SHRIMP SCHOOL 2000 - Information and Registration Form
University of Florida, May 9-11, 2000

The University of Florida’s Aquatic Food Products Program continues the
annual series of Shrimp Schools dedicated to advancing shrimp product
quality and safety. This technical program features current and basic
topics through lectures and actual hands-on training. The 2000 program
includes training with sensory indicators for shrimp decomposition,
overview of the virus situation in shrimp culture with hands-on training
on detecting viruses on processed shrimp, hands-on training with
automated monitoring for quality and ammonia, discussion on Salmonella
in shrimp vs. zero tolerance, methods to determine phosphates and
sulfites residuals, Sanitation Control Procedures with monitoring
methods, and a standardized cook retention test for yields. The
decomposition training will be conducted in cooperation with the leading
FDA decomposition experts. All other training will be conducted by
experienced speakers from University of Florida, University of Arizona,
FL Dept of Agriculture, National Fisheries Institute and the private
industry. The training will combine lectures with daily laboratory
experience and demonstrations. This program is useful for experienced
and new suppliers, processors, importers, exporters, inspectors and
other private sectors, including expertise from management through
production. All participants will be provided with certificates of
completion for future reference as alumni of the UF-Shrimp School.

Lodging and Meals
Special room rates have been arranged at two hotels, conveniently
located near many restaurants and shopping centers.
The Cabot Lodge:
This hotel is located off Archer Rd, east of interstate 75 and accessed
by interstate exit no. 75.
The rates are $ 62 plus tax per night. To secure the special rate,
reservations must be confirmed
before April 20. When registering request the “UF-Shrimp School rate”.
This rate includes daily continental breakfast and late afternoon
beverages. The telephone number for this hotel is
352-375-2400.
Courtyard by Marriott:
This hotel is located right next to the Cabot Lodge, off Archer Rd, east
of interstate 75 and
accessed by interstate exit no. 75. The rates for this location is
$81.00 plus tax per night.
Reservations must be confirmed before April 24. When registering
request the “UF-Shrimp
School rate”. This rate includes daily continental breakfast. The
telephone number for this hotel is 352-335-9100.

The training schedule will include breaks, but all daily meals are on
your own. Numerous
restaurants surround the campus and hotel area. Many are within walking
distance on a clear
day. Advice will be provided for special tastes and local events.

On Wednesday night, May 10th, there is going to be a complimentary
social at the Gainesville Ale House. This restaurant is within walking
distance from both hotels.

Transportation and Parking
Delta, US Airways and Gulf Stream are the major airlines servicing
Gainesville. Passengers
arriving to Gainesville may rent a car or take a taxi to the hotel(s).
Optional service and rates are
available through Jacksonville and Orlando, particularly for
international travelers. Both airports
are located two hours driving distance from Gainesville. All major
rental cars companies have
locations in both airports, as well as in Gainesville. US participants

Complimentary daily transportation to and from the University will be
provided. The bus can be
identified by a sign reading “Shrimp School 2000" on the front
windshield. The Bus will depart the Cabot Lodge hotel at 8:00 am and the
Courtyard by Marriott at 8:10 am. Passes for daily parking on campus
(approx. 3.5 miles from the hotel) can be provided on request.

Schedule
All training will occur in the Aquatic Food Products Laboratory and the
New Aquatic Food
Products Pilot Plant, University of Florida.

Registration
The course will be limited to 25 registrants. The limited class size
assures an effective teacher to
student ratio. The course registration fee (US $275.00) is based on
cost recovery for materials
and instructors travel. To secure a position, please fax the attached
confirmation form by February 15, 2000 and mail the checks by March 31,
