Dear Listers,
     Could anyone let me know where to find info on whether or not I need
to put a safety seal on my tubs of smoked tuna. The containers are
plastic with lids but not quite air tight ( air passes through when
squeezed). We've seen fish pate sold in the same container without a
seal at the local grocery store & were wondering what the ruling was on
safety seals around the lids. Our water phase salt is 3.5 or above
although we understand that if the smoked fish is not vac-packed it only
needs to be 3.0 (we use no preservatives or nitrates).
