MALE VOLUNTEERS WANTED FOR A STUDY ON ABSORPTION OF ZINC FROM WHEAT
PRODUCTS THAT HAVE BEEN FORTIFIED WITH IRON AND ZINC
Scientists in the Department of Nutrition at UC Davis are conducting a
trial to determine the absorption of zinc from bread and noodles made with
wheat flour that has been fortified with iron and either zinc sulfate or
zinc oxide. The method uses a tracer dose of radioactive zinc (65Zn) and
the whole body counter to determine zinc absorption.
The study will last either 3 or 4 weeks (1 day of study per week),
depending on which diet group you are assigned to. At the beginning of the
study we will measure your height and weight. We will also take a small
blood sample (10 ml or 2 teaspoons) to measure your hemoglobin, serum
ferritin and plasma zinc concentrations. You will be asked to go to the
Institute of Toxicology and Environmental Health once a week for
(approximately 2 hours each day) for 3 or 4 weeks depending on which diet
group you are assigned to. On the first 2 weeks (Days 1 and 8) we will
collect 2 urine samples (before and 1 hour after meal) to determine your
gastric acid output.

assigned to) for completing the study.
