After many years in "legal publishing," in NYC and Chicago, I have never
heard of "legal proofreading."

When I started in the publishing industry, there was something called
"proofreading" that required two people; one to read the source document
aloud, and the other to read the composed document. The mission was to
catch discrepancies.

I doubt that is done very frequently in the publishing industry, though
it may well be done at some law firms. In commercial applications, in
fact, "double keyboarding" has taken on the role of catching
discrepancies. Sometimes it's not done, of course.
